Rotisserie butter chicken, grilled courgette, asparagus, mozzarella and pesto
This isn't just any chicken, it's a slow cooked, succulent, all butter-basted, M&S rotisserie chicken. You can of course, roast your own chicken for this sarny if you've got the time.
INGREDIENTS
Serves four

Half a rotisserie butter chicken from M&S, shredded
2 tbsp olive oil
1 garlic clove, finely chopped
2 tsp thyme, finely chopped
1 courgette, thinly sliced lengthways
8 asparagus spears
150g mozzarella, cut into 12 slices
4 tbsp green pesto
4 green olive ciabatta rolls
Heat the olive oil in a griddle pan over a medium heat and add the garlic. Cook for about 1 minute until the garlic is fragrant, then add the chopped thyme, courgette and asparagus.
Fry for 3 minutes, turning the courgette and asparagus half-way through and remove from heat.
Pre-heat the grill, cut the ciabatta rolls in half and lightly toast the insides. Once toasted, butter the bottom slice and spread pesto on the tops.
Load up the filling but leave the tops off for the time being.
Pop the sarnies back under the grill for a couple of minutes, until the mozzarella has melted a little.
Remove them from under the grill and close 'em up.
