Prawn cocktail with lettuce and tomato
Before the meatfest begins, here's something a little lighter to start you off for the Christmas season.
50g tomato ketchup
1/4 tsp cayenne
1 tsp lemon juice
1/2 tsp Worcestershire sauce
1/4 tsp paprika
100g small, cooked and peeled prawns
1 little gem lettuce
2 tomatoes, sliced
2 half-size granary baguettes
Firstly, grab a large bowl and combine the mayonnaise, ketchup, cayenne, saffron, lemon juice, Worcestershire sauce, paprika and prawns.
Thoroughly mix everything together and season to taste.
Cover with cling film and leave to rest in the fridge for 30 minutes.
Meanwhile, cut the baguettes open lengthways and spread a bit of butter on the inside.
Lay a few lettuce leaves and tomato slices on the bottom half of each baguette, then spoon in the prawn cocktail mixture over the top and close up.
