Spicy prawn cocktail with Little Gem lettuce and avocado

INGREDIENTS

  • 175g peeled and cooked North Atlantic Prawns

  • 2 tbsp mayonnaise

  • 1 tsp World of Zing, Peri Peri Naga Chilli Ketchup

  • ½ head of Little Gem lettuce

  • ½ avocado, smashed

  • Butter

  • 2 ciabatta rolls

INSTRUCTIONS

Mix together the prawns, mayonnaise and ketchup in a bowl. Taste and add more ketchup if you like it spicier.

Slice the ciabatta rolls in half and thinly spread butter on each piece.

Heat a frying pan over a medium heat.

Place the ciabatta in the pan, butter side down. Keep a close eye on them and remove once they’re golden brown.

Divide the prawn mixture between the two ciabattas. Tear the lettuce leaves from the head and lay on top of the prawns. Spread the smashed avocado on the top slices of ciabatta, close the sandwich and tuck in.
